Berry Pineapple Smoothie

Everyone needs a bit of sunshine right now… in the midst of all of the recent stress and worry from the corona virus I think that eating healthy and creating refreshing treats for yourself is important for morale. This smoothie is really clean and fun; it has a bright, tart flavor from the pineapple and a gorgeous hot pink color from the raspberries.

Smoothies are usually better when made with fresh fruit, but I found that using frozen pineapple and frozen mixed berries tasted delicious too. An added benefit of using already frozen fruit is that you can use less ice (ice makes smoothies more watered down).

I really like that this smoothie is dairy-free and sugar-free. The pineapple and berries are so good on their own that they don’t need yogurt or sugar! Instead of using coconut milk like I usually would, I made this smoothie with 100% pineapple juice as the liquid base. This added a wonderful sweetness without making the smoothie creamy or milky.

This recipe yields 2-3 servings (depending on glass size).

Ingredients: 

  • 2 cups frozen pineapple chunks
  • 1/2-1 cup frozen mixed berries (raspberries, blackberries, strawberries)
  • 1-2 cups 100% pineapple juice
  • handful of ice cubes

Directions: 

Blend all ingredients together and add more ice/liquid until desired consistency is reached. It’s that simple!
